The first thing you should prepare is the grill. You can either use wood or charcoal and let it down to the embers.
For the barbeque rub you will need:
- 7 tablespoons of salt,
- 7 tablespoons of white granulated sugar,
- 7 tablespoons of brown sugar,
- 7 tablespoons of cumin,
- 4 tablespoons of cayenne pepper,
- 15 tablespoons of paprika and
- 7 tablespoons of pepper.
Mix together all ingredients very well and then rub on the entire chicken. Place the chicken in the refrigerator for around one hour before grilling. Grill the chicken on the side with no fire and cover your grill. It should take about 3 hours for the chicken to cook completely.
