Smoked Prime Recipe
Smoking produces some of the best tasting prime ribs possible. A smoker barbecue can be used for all kinds of meat but is especially useful for large joints of meat like prime rib roasts.
Almost every smoked prime recipe is easy to follow. Cooking in a smoker requires a lot of time but once you taste the results of a smoked prime recipe you'll never want to cook in a regular oven again.
Before cooking a prime rib roast, it should be taken out of the fridge for about two hours to allow it to warm up to room temperature. In the last half hour or so light up the smoker so that it has a chance to heat up to about 250°. Your smoked prime recipe will probably tell you to season the exterior of the meat by rubbing on salt and pepper and spices like paprika, cayenne and rosemary.
The spices can be mixed with chopped fresh garlic and mixed with a little bit of red wine to make a paste which you can use to cover the surface of the prime rib roast. Your smoked prime recipe may suggest about three tablespoons of herbs and spices for an average sized roast.
When the smoker has reached the proper temperature, place the roast on the lower rack. For extra flavor, the smoked prime recipe will tell you to pour a mixture of red wine, oil and vinegar over the roast once it is in the smoker.
As the prime roast cooks, the water pan needs to be refilled from time to time and your smoked prime recipe may tell you to baste the meat every hour or so. Cooking time will be about six hours.
You need a good-quality meat thermometer to check the interior temperature of the prime rib roast. When the temperature has reached 115° the meat is rare, while 145° indicates that the roast is medium. Your smoked prime recipe will give you guidelines on the cooking time but only you know how you like your meat cooked.
Once the roast has been cooked take it out of the smoker and let it stand for about 15 minutes before serving it. The fabulous taste a share to have people clamoring for your smoked prime recipe!
