For the Caribbean marinade you will need: - 4 sliced scallions,
- 2 chopped jalapeno peppers seeded,
- 1/3 cup of lime juice,
- ¼ cup of honey, and
- 2 tablespoons of thyme.
To begin you will need to rinse your chicken well with cold water. Now, mix together all the ingredients to create the Caribbean marinade. Place the chicken in a bowl with a lid and pour the marinade over the chicken. Cover and refrigerate for at least two hours but not over 6 hours. Prepare your grill by brushing with vegetable oil or using a non-stick spray. Place the chicken on the grill and cover around 5 inches from heat. The grill should be on medium heat. Cook for 10 minutes and then turn and cook again for another 10 minutes.
