For the first recipe for Lemon Chicken You will need: - 2 cups of water,
- 2/3 uncooked fast cooking barley,
- 2 cups of pre-cooked diced chicken,
- ½ cup of chopped celery,
- ½ cup of chopped tomatoes,
- ½ cup of chopped onions,
- 2 tablespoons of lemon juice,
- 1 teaspoon of Dijon mustard,
- lettuce leaves, and
- 1 lemon cut into wedges.
In a large pan bring the water to boil over high heat. Add the barley and return to a boil. Now, reduce the heat to medium and cover. Simmer for around 10 minutes or until the barley is tender, remember to stir once in awhile. - ¾ cup of your favorite dry white wine,
- fresh squeezed juice from one lemon,
- salt and pepper to taste,
- 1 bay leaf,
- 2 12 ounce frozen cod,
- haddock or sole filets,
- ½ pound of sliced mushrooms,
- 2 sliced green onions,
- ¼ cup of margarine,
- ¼ cup of all purpose flour,
- ½ cup of half and half, and
- ¼ teaspoon of nutmeg.
In a medium size skillet stir together the water, wine, lemon juice, salt, pepper and the bay leaf. Bring the mixture to a complete boil. Now, add the fish and cover the skillet. Simmer for around 15 minutes on medium heat or until the fish easily flakes with a fork. Remove the fish and reserve the sauce in a bowl, removing the bay leaf. Break or cut up the fish in small bite size pieces. In the skillet, add the mushrooms and green onions. Sauté until they are slightly tender. Remove from the heat and stir in the all purpose flour. Cook just a bit more stirring constantly then slowly add the reserved liquid, fish, and nutmeg. Cook just until warm. Serve and enjoy.
