Now, the receipt for the low fat low sugar carrot cake recipe, you will need: - 2 ½ cups of grated carrots,
- 1 ½ cup of raisins,
- 1 ½ cups of whole wheat flour,
- 1 cup of all purpose flour,
- 1 tablespoon of cinnamon,
- 2 tablespoons baking powder,
- 1 can of unsweetened thawed frozen apple juice,
- 1 tablespoon of dark corn syrup,
- 1 tablespoon of vanilla extract,
- 4 egg whites, and
- 1 ¼ cup of unsweetened applesauce.
For the icing you will need: - ½ cup of unsweetened thawed frozen apple juice,
- 1 packet of unflavored gelatin,
- 1 cup of yogurt cheese, and
- 2 tablespoons of vanilla extract.
To prepare the icing, in a medium saucepan pour 2 tablespoons of apple juice and the gelatin let stand for a couple of minutes and then bring to a rolling boil over high heat. When the gelatin is completely dissolved remove from heat. In a large mixing bowl, mix together the yogurt cheese, vanilla, and the rest of the apple juice. Using an electric mixer, mix together, on low speed until well blended. Turn the mixer on medium speed and slowly add the gelatin mixture. Place in the refrigerator for 45 minutes. Pre-heat your oven to 350 degrees Fahrenheit. In a medium bowl, mix together the carrots and raisins and set aside. In a large bowl, mix together the flours, cinnamon and baking powder. When blended well, add the apple juice, corn syrup and vanilla. Beat in the egg whites one at a time, with an electric mixer on medium speed. Now, stir in the applesauce and the carrot mixture. Pour into cake pan and bake for around 40 to 45 minutes or until the cake is done. Let cool and then frost with the yogurt cheese icing. Keep in the refrigerator to keep fresh.
