Chili is a very popular recipe that many people enjoy and this low fat Mexican Chili recipe is just the right ticket to have your taste buds dancing the Mexican hat dance.

For this recipe you will need:

  • 3 cups of black beans,
  • 6 teaspoons of beef bouillon granules,
  • 1-14 ounce cans of Chipotle Salsa,
  • 6 minced garlic cloves,
  • 1/3 cup of chili powder,
  • 1 tablespoon of cumin,
  • 1 pounds of lean cubed chuck roast,
  • teaspoon of oregano,
  • 1 chipotle chile, and
  • 1 chopped onion.

Soak the beans overnight in the refrigerator with just enough water to cover the beans. After soaking add the spices and bring to a boil, lower heat and simmer for one hour.

Brown the beef in a non-stick frying pan and add to the beans. Simmer again for an hour or longer until the beans and beef are tender and done. Add the salsa and continue cooking another 15 minutes until all the flavor is blended well.

Another wonderful low fat Mexican recipe is sour cream chicken enchiladas.

For this recipe you will need:

  • 8 ounces of light sour cream,
  • 8 ounces of nonfat plain yogurt,
  • 1 can of fat free cream of chicken soup,
  • 1 small can of diced chili peppers,
  • 12 white corn tortillas,
  • 4 ounces of low fat cheddar cheese,
  • 1 cups of chopped cooked chicken breast, and
  • cup of chopped scallions.

Pre-heat your oven to 350 degrees Fahrenheit. You will need a 13x9 baking pan preferable with a lid. If you do not have a lid you can use aluminum foil. Spray your baking pan with a nonstick spray such as Pam. In a bowl, mix together the sour cream, yogurt, soup and chilies.

Heat the flour tortilla just until soft. Spoon 3 tablespoons of sour cream in the center of each tortilla shell. Add the cheese, chicken and onions on top of the sour cream. Roll each tortilla shell and place in the baking pan with the seam down. Pour the rest of the sour cream over the top.

Cover and bake for 30 minutes.

Remove and sprinkle with the rest of the cheddar cheese and continue baking until cheese is melted.
