Pre-heat your oven to 375 degrees Fahrenheit. Mix together the wheat bran, banana and soy milk. Let stand a couple of minutes and then add the sugar, apple butter, and egg. Mix until well blended. Mix together the flours, pecans, baking powder, cinnamon and salt. In the center of the dry ingredients make a well. Now add the bran mixture to the flour mixture and stir completely until moist. Spray the muffin pan with cooking spray and spoon batter into the pan. Bake for 20 minutes or until the muffins spring back when touched gently. Cool and enjoy. Pre-heat your oven to 350 degrees Fahrenheit. Spray your muffin pan with a non-stick cooking spray. In a large bowl, mix together the flour, sugar, baking powder and salt. In another large bowl, mix together the oil, milk, eggs and almond extract until well blended. Next, add the dry ingredients to the milk mixture until moist. Now slowly and gently add the poppy seeds. Spoon the muffin mixture into the muffin pan and bake for 30 minutes. Cool and serve.
