Low Fat Rice Recipes
Rice is a wonderful dish that can be prepared in many different ways, but usually they are not low in fat. You can find on our website low fat rice recipes that will enhance any meal that you prepare and not add extra pounds. Some of the low fat rice recipes are also great just by themselves without the need of another dish.
This first recipe used whole grain black sticky rice and was adapted from a Thailand recipe. You will need: - 2 cups of whole grain black sticky rice,
- 2 cups of low fat coconut milk, and
- 2 ½ teaspoons of sweet and low or other sugar substitute.
Rinse the rice until the water runs clear and then soak in the refrigerator covered with just enough water to cover the rice. Soak for at least 4 hours preferably overnight. Place the rice in a bowl and use a steamer if you have one to steam the rice with a small amount of water for around 40 minutes or until the rice is tender. To prepare the coconut sauce, heat the coconut milk and sweet and low over medium heat stirring constantly. Slowly add the coconut milk to the rice mixing well. If you do not have a steamer you can place the bowl of rice in a pan of boiling water and it will have the effect.
Another wonderful low fat rice recipe with the flavor of orange is this one. You will need: - 1 minced onion,
- 1 cup of rice,
- ¼ cup of margarine,
- salt to taste,
- juice and
- grated zest from 1 orange, and
- ½ cup of chopped pecans.
Sauté the onion and rice in the margarine in a large skillet for about 5 minutes. Add the water and juice from the orange. Bring the mixture to a boil. Reduce heat, cover and simmer for around 45 minutes or until the rice begins to brown. Fluff the rice with a fork and add the orange rind and the pecans. Serve and enjoy the smiles on your guest’s faces.
