  • 1 tablespoon of vegetable oil,
  • 2 sliced carrots,
  • 2 sliced celery stalks,
  • 1 minced onions,
  • 2 quarts of beef broth,
  • 3 cups of shredded cabbage,
  • 2 cups of whole fresh green beans,
  • 1 bay leaf,
  • 4 medium diced and unpeeled potatoes,
  • 1 large can of diced and un-drained tomatoes,
  • 1/3 cup of minced parsley,
  • 1 tablespoon of garlic salt,
  • 1 teaspoon of dill weed, salt and
  • pepper to taste.

In a large saucepan, pour in the vegetable oil, add the carrots, celery and onion and sauté over medium high heat until the onions are translucent around 5 minutes. Now, add the broth and bring to a rolling boil.

Next, place the cabbage, green beans, and bay leaf, turn down heat to medium low and simmer for 30 minutes. Add remaining ingredients and continue simmering until the potatoes are tender.

For this recipe you will need:

  • 1 large family size can of chicken broth,
  • ˝ pound of boneless,
  • skinless chicken breast cut into cubes,
  • 1 ˝ cups of egg noodles (low fat),
  • 1 cup of sliced carrots,
  • ˝ cup of chopped onion,
  • ˝ cup of chopped celery,
  • salt and pepper to taste.

In a large cooking pan place all the above ingredients. Heat on medium high until the soup comes to a rolling boil. Turn down the heat to simmer and continue cooking until the chicken is completely done and the noodles are tender.
