When you are in a hurry to get dinner on the table you sometimes don’t have the time to worry about your diet. But, if you place some of these quick low fat recipes in the front of your recipe box or your cookbook you will always have quick low fat recipes at hand that your family will enjoy and you will stay on your diet.

This first recipe is so good you will have to have it more than one once a month. The whole family is sure to enjoy this quickLow Fat Pizza Recipe.

For this recipe you will need

  • 1 baked low saturated fat or low cholesterol pizza crust,
  • 1 tablespoon of olive oil,
  • ¾ cup of low fat pizza sauce,
  • ½ cup of low fat sharp shredded cheddar cheese,
  • 1 cup of low fat shredded mozzarella cheese,
  • ½ cup of diced onion,
  • ½ cup of diced green pepper,
  • 1 cup of sliced mushrooms,
  • ½ cup of sliced black olives,
  • ½ cup of honey roasted turkey,
  • 1 tablespoon of vegetable oil for sautéing the mushrooms.

You can also used seasonings such as crushed red pepper, basil, oregano or Italian seasoning. Place the crust on pizza pan. Sprinkle with olive oil. Be sure to spread the oil over the crust and the rim.

Spread the pizza sauce over the crust and then add the ½ of the cheeses and the seasoning, next layer the remaining ingredients, and then add the rest of the cheeses.

Pre-heat your oven to 450 degrees Fahrenheit. Bake for around 12 minutes or until the cheese is melted.

Another yummy quick low fat recipe if you are not in the mood for pizza is Chicken Enchiladas.

This recipe is wonderful and is also low fat. You will need:

  • 1 cup of low or non-fat sour cream,
  • 1 cup of shredded low fat Monterey Jack cheese,
  • 1 cup of your favorite salsa,
  • 10 ounces of cooked cubed chicken, and
  • 6 fat free flour tortillas.

Pre-heat your oven to 350 degrees Fahrenheit. Heat the tortillas in a skillet but just warm. Spoon the sour cream onto the center of each tortilla shell and then top with the chicken and cheese. Roll and place in a 13x9 inch baking dish with the seam side down. Add the salsa on top of the enchiladas.

Bake covered for 30 minutes. Remove from heat and add the remaining cheese and continuing baking until the cheese melts.
