Three Tasteful Low Fat Vegetable Recipes

Vegetable Stew Low Fat

What is better than vegetable stew? Of course low fat vegetable stew and this recipe will hit the spot.

You will need:

  • 2 tablespoons of water,
  • 1 cup of sliced zucchini,
  • 1 ¼ cup of sliced squash,
  • ½ cup of sliced green pepper,
  • ¼ cup of sliced celery,
  • ¼ cup of chopped onion,
  • 1/8 teaspoon of garlic powder,
  • 1 sliced tomato,
  • 1 cup of canned carrots, and
  • salt and pepper to taste.

In a large non-stick skillet on medium heat add zucchini, squash, green pepper, water, celery and onion. Cook until the vegetables are just tender and then add the remaining ingredients turning heat to low and continue cooking until hot. Now, enjoy.

Other great low fat vegetable recipes can use some wonderful ingredients such as rice to create a hearty and great tasting meal.

Low Fat Cabbage Casserole

You will love this rice and cabbage casserole and so will your entire family.

For this recipe you will need:

  • 2 teaspoons of vegetable oil, peanut oil or olive oil,
  • 6 cups of chopped cabbage,
  • 1 cup of chopped onion,
  • 3 cups of water,
  • 1 cup of chopped tomatoes,
  • 2 tablespoons of brown sugar,
  • 2 tablespoons of vinegar,
  • 1 cup of uncooked white rice, and
  • salt and pepper to taste.

Pre-heat your oven to 350 degrees Fahrenheit. While the oven is pre-heating, sauté the cabbage and onion in a large non-stick frying pan with the oil for around 1 minute. Then add water, tomatoes, brown sugar and vinegar bring to a boil and then stir in the rice.

Cook for just a couple of minutes to blend ingredients. Now, spoon the mixture into a baking dish and cover.

Bake for around 45 minutes until the rice is tender.

Potato Pancakes

A Low fat vegetable dish can be very simple like this one for potato pancakes.

You will need:

  • 2 cups of whipped potatoes,
  • ¼ cup of chopped onions,
  • 1 beaten egg,
  • 2 tablespoons of all purpose flour,
  • a tad of vegetable oil and
  • salt and pepper to taste.

In a large bowl, combine all ingredients except the oil and stir until well blended.

In a large non-stick skillet, heat the oil until droplets of water dance in the pan.

Spoon about 2 tablespoons of potato batter into the skillet and cook until well browned and then turn and cook the other side until well browned.
