Using this duck egg recipe you won’t even need to tell people you substituted duck eggs in, everyone trying them will want more. These scones can be used as a breakfast food or just as a snack at a party or around the house. To make the scones you’ll need: - 2 duck eggs that have been beaten,
- 2 cups of unbleached flour,
- 1 tablespoon baking powder,
- 3 separate tablespoons of sugar,
- ¼ teaspoon of salt,
- 1/3 cup of cold butter,
- ½ cup of whip cream,
- ½ cup chocolate chips,
- ½ cup of chopped hazelnuts, and
- ¼ cup raspberry preserves.
Cut the butter into chunks and place in a large bowl, and then add the flour, baking powder, 2 tablespoons of sugar, and salt. Using your fingers mix this all together until it’s crumbly. In another whip the eggs and whip cream to make a smooth mixture, take tablespoon out and set aside. Take the rest in the bowl and add to the dry mixture, beat with a fork until it’s fluffy. Press in on the wide end of each wedge and then glaze the rounds with the tablespoon of the duck egg mixture. Spread the preserve in the cracks of the wedges and sprinkle sugar over each round. Bake for 25 minutes at 375 degrees Fahrenheit.
