Roast Duck - A Special For the Holiday Season
For the holiday season what is better than a roast duck recipe? Many people are very tired of the traditional Thanksgiving and Christmas meals so they are turning to other delectable main course meats to serve and duck has become one of the most popular.
For this Thanksgiving or Christmas holiday why not try a roast duck recipe like this one.
You will need: - 1 can of cranberry sauce,
- the juice from one lemon including the rind grated,
- ½ cup of brown sugar,
- 1 teaspoon of rum extract,
- 4 slices of hickory smoked bacon, and
- 1 duck around 6 pounds.
Pre-heat the oven to 350 degrees. If you choose to stuff your duck before roasting there is a great stuffing for duck next, if not just place your duck in a roasting pan and bake for around 2 hours.
In a saucepan, combine the remaining ingredients except for the bacon and bring to a boil, simmer until all ingredients are well blended and the sauce is smooth. Pour the glaze over the duck and place the bacon strips over the top of the duck and continue baking for another 30 minutes. Now, your duck is ready to serve.
Stuffing for your roast duck will also be a wonderful and delightful addition for the holidays.
For the stuffing you will need: - 2 cups of bread crumbs,
- ½ cup of chopped orange slices,
- ½ cup of chopped apple,
- 1/3 cup of raisins,
- ½ cup of walnuts,
- ¼ teaspoon of cinnamon, and
- a pinch of salt.
In a large bowl, mix together all ingredients and then lightly stuff your duck before baking.
