Wild Duck Recipe - a Great Duck Soup
So after a full day of hunting you come back home with a couple ducks. Excited as ever you can’t seem to think how of which wild duck recipe you should use. Roast? Grill? Maybe even bake? The taste of a wild duck is even better than the store bought ones, since it is going to be as fresh as the day you got it. Instead of any of the above mentioned ways of cooking, how about trying something such as a wild duck recipe like duck soup. Wild duck is perfect for this since it will have a fresher and more robust taste than a store bought.
A duck recipe for soup is something a lot of people don’t think about. Why not though?
The duck is more flavorful than both chicken and turkey.
So why not throw something like duck into a soup, we do it everyday with chicken. The next time you decide to throw some chicken in for chicken noodle soup, step back, and think about maybe trying a duck.
For a duck soup you’ll need of course: - a duck (probably around 5-8),
- 1 of both zucchini and yellow squash,
- 5 cloves of garlic,
- a handful of chopped or ground herbs (any you like, things like thyme, basil, and rosemary),
- 2 cans of seasoned tomatoes,
- ˝ lb fresh mushrooms,
- 2 cups of rice,
- 1 onion,
- bottle of your favorite barbeque sauce, and
- 4 stalks of celery.
First cut the breast meat off of your ducks and place the ducks body into a large pot of water, when the ducks until they float they’re ready. Add half of your seasonings to the water and boil the water for 1-2 hours. While the water is boiling take the breast meat and rub your seasoning on them, then take a brush and brush on the barbeque.
Cook these breasts until they are barely cooked. Remove the ducks from the water and strip them of the rest of their meat. Next you’ll want to sauté the mushrooms and celery in another large pot for about 5 minutes. Remove those things then put the onions and garlic on to sauté for the same amount of time. After about 5 minutes place the duck meat into the pot and let this cook for about another 5 minutes. After all of this is done add the cooked vegetables and toss all together. Take the tomatoes and place them in a blender, pulse the blender twice.
Pour the tomatoes into the pot followed by however much of the broth that has been saved.
You will be able to freeze any left over soup from your wild duck recipe and enjoy it even if it is not duck season.
