Healthy Vegetable Recipe
Citrus tasting, healthy vegetables are a great side dish.
This healthy vegetable recipe compliments any dinner table and gives tried, but true vegetables a burst of flavor.
It combines different vegetables to create a unique taste that vegetable lovers will not be able to get enough of.
Ingredients:
- 1 small bag okra
- 1 small bag green beans
- 1 small bag corn
- 1 small bag cauliflower
- 1 small bag yellow squash
- 1 medium sized yellow onion, diced
- 1 clove garlic, finely diced
- 1 orange bell pepper, coarsely chopped
- 1 medium sized tomato, diced
- 1-16 oz. can tomato sauce
- ½ cup low fat mozzarella cheese, shredded
- 2 tsp. fresh basil, finely minced
- 1 tbsp. olive oil
- 1 lemon
- 2 cups water
- 1 tsp. salt
- 1 tsp. black pepper
To Make; I use frozen vegetables for this recipe. It does make the recipe go a lot smoother, but feel free to input fresh vegetables where you can.
The bagged vegetables do not need to be completely thawed to use in this recipe.
Place all the bagged vegetables into a large saucepan. Add 2 cups of water. In a smaller saucepan, combine the tomato sauce, basil, fresh squeezed lemon juice, salt, and black pepper.
Boil the tomato sauce mixture on high for 8-10 minutes and then add it to the bagged vegetables.
In a shallow pan, combine the olive oil, the diced yellow onion, the garlic, diced tomato, and coarsely chopped orange bell pepper.
Sauté these ingredients until the onions have started to brown.
Cook the bagged vegetables and tomato sauce on high heat for 10 minutes and then turn down to low heat and cover. Let the vegetables simmer. Add the sautéed ingredients now.
Let this dish simmer, covered, for 15-20 minutes. Remove the pan from the heat and place in a nice serving bowl.
