Healthy Blueberry - Chicken Recipe

This healthy blueberry recipe is so yummy; you will wonder how you ever made it through a salad without blueberries.
- 1 cup brown rice
- ½ lb. skinless chicken, cut into cubes or strips
- 1 cup blueberries
- 2 cups fresh spinach
- 1 cup strawberries, chopped into halves
- ¼ cup red onion, diced
- ½ cup fresh squeezed lemon juice
- 1 tsp. garlic salt
Preheat the oven to 400. Cook the brown rice on high heat in a medium sized saucepan until it has started to boil. Stir the rice. Reduce the heat to low, cover, and cook for an additional 15-20 minutes.

You can buy chicken that is pre cubed or cut into strips. It depends on how you want your chicken in the salad. Season the chicken strips or cubes with garlic salt before placing them into the oven. Cook the chicken on 400 degrees for 20-25 or until it is done.
Remove the chicken from the oven and set it aside to cool. Once cooled, combine the rice and chicken in a small bowl. Set aside. Thoroughly wash the spinach leaves and tear them into small pieces with your hands to avoid bruising the leaves.
In a small bowl, combine the spinach and the lemon juice. Lightly toss. Place the spinach on two plates. Next top the spinach with the chicken pieces and rice. You can squeeze more lemon juice on these two ingredients if you would like. Top this dish with diced red onion and chopped fresh blueberries and strawberries.
Serve this dish cold or hot. If served hot, cook the chicken and rice towards the end of the preparation and serve immediately.
