Carrot Cake - Healthy and Delicious



This healthy cake recipe is delicious and nutritious. There is only sugar in the soymilk and apple juice, which is great because no sugar needs to be added.

Use the frosting if you desire a sweeter taste and an added decoration to the cake.

Ingredients:

  • 2 eggs, slightly beaten
  • 1 cup carrots, finely grated
  • 1 cup raisins
  • 1 cup walnuts, chopped
  • ½ cup low fat margarine, softened
  • 1 ½ cups unbleached flour
  • ½ cup original flavored soy milk
  • 1 can unsweetened frozen apple juice (only use half)
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 container of cream cheese frosting (optional)

To Make:

Preheat the oven to 400. Spray a 9-inch cake pan with a light coating of cooking spray or vegetable oil.

Thaw the frozen apple juice before using it. In a large mixing bowl, combine the apple juice, the two eggs, and the flour.

Stir this mixture until all the flour is dissolved.

Slowly add the soymilk and the baking soda and baking powder.

Continue stirring. Let the butter soften before adding it to the cake mixture. This will make it easier to stir.

Now add the grated carrots. Make sure all the lumps are worked out of the cake for a better-looking appearance. Lastly, add the raisins and the walnuts.

Only use half of the raisins and walnuts. The remainder of these ingredients will be used later for decoration. Stir a couple more times. Spoon the cake into a greased pan and make sure it is even on all sides.

Bake this carrot cake on 400 for 30-35 minutes. When a toothpick inserted comes out clean, this cake is done. Remove it from the oven and let the cake completely cool before serving.

Once the cake has cooled, take the cake out of the pan and place it on a flat serving tray.

This carrot cake may be served with or without the frosting. If you want frosting, add the cream cheese frosting to the top and all sides of the cake. Then add walnuts and raisins to the sides of the cake.

Now serve everyone a nicely sized piece of cake.
