Chicken Tortilla Soup - An Easy Healthy Dinner Recipe

Chicken tortilla soup is a hearty, spicy soup that will bring a completely new flavor into your kitchen.

This Mexican easy and healthy dinner recipe is simple to make.

You can make it in advance and then put together when time is something you do not have a lot of. Take out your cutting board today and get to chopping.

Ingredients:

  • All purpose flour (optional)
  • 1-14.5 oz. can chicken broth
  • 2 cups boneless chicken breast, cut into cubes
  • 1 medium sized tomato, diced
  • 2 small fresh green chilies, diced
  • 1 jalapeno, diced
  • ¼ cup scallions, diced
  • 1 can spicy V8 juice
  • 1 clove garlic, diced
  • 1 avocado, thinly sliced
  • ¼ cup fresh cilantro, minced
  • 1 tsp. cumin
  • 1 tbsp. olive oil
  • 1 tsp. salt

To Make:

Preheat the oven to 375. You will want to use boneless chicken breast meat in this recipe. So you can either buy frozen chicken that is already cubed or buy a whole chicken and cut it into cubes yourself. Either way is acceptable for this recipe.

If you choose to cube the chicken yourself, lightly toss the chicken pieces in flour before baking. Bake the cubed chicken in the oven for approximately 40 minutes. Remove the chicken from the oven.

In a large saucepan, combine the cooked cubed chicken, one can of chicken broth, and the can of spicy V8 juice.

Cook this soup base for chicken tortilla soup on high heat for 10-12 minute. Reduce the heat to low and cover. In a small pan, sauté the diced scallions, jalapeno, and garlic in olive oil. Once the garlic has begun to brown, remove the pan from the heat and add the ingredients to the large saucepan.

Start to dice up the tomato and green chilies. Add them both to the saucepan. Lastly, add cumin and salt to the tortilla soup. Let the soup simmer on low heat for 20 minutes. Remove the soup pan from the heat and pour even amounts into soup bowls.

Top each soup dish with fresh slices of avocado and minced cilantro. Serve immediately. Makes enough chicken tortilla soup for 4 servings.
