Banana Bread Recipe - The Healthy Variety



Nothing says it is holiday time better than fresh, warm bread straight from the oven.

Good old-fashioned banana bread with raisins baked right in is bread perfection.

This healthy bread recipe is not only good for you; it has a sweet taste that no one can resist.

Have a slice for breakfast or dessert. No matter when you eat it, you will be saying yummy for the rest of the day.

Ingredients:

  • 1 cup ripe banana, mashed
  • 1 cup plain flavored yogurt
  • 1 egg, slightly beaten
  • 2 cups unbleached flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 2 tsp. vanilla
  • 1 tsp. salt
  • 1 cup brown sugar, firmly packed
  • 1 tbsp. maple syrup
  • ½ cup vanilla flavored soy milk
  • ½ cup raisins
  • ¼ cup walnuts or pecans, finely chopped
  • 2 tbsp. olive oil

To Make:

Preheat the oven to 350. Grease a loaf pan of whatever size you prefer.

In a small sized mixing bowl, combine the banana and the plain yogurt. Mash these two ingredients together.

In a medium sized mixing bowl, combine the egg, the soymilk, and the flour. Use more soymilk if the bread mixture becomes dry and hard to stir.

Add the olive oil, vanilla, and maple syrup. Continue stirring. Gradually add the brown sugar. Add the remaining dry ingredients.

Lastly, stir in the raisins and the walnuts or pecans, depending of which nut you chose to use. Once the bread dough is mixed well, spoon it into the greased loaf-baking pan.

Bake the banana bread in the preheated oven for approximately 50 minutes.

Check the banana bread’s consistency after 30 minutes of baking. A knife inserted into the bread will come out clean when it is done. Dust the top of the bread with nutmeg and serve it immediately.

Banana bread may be served warm with butter. Yields 12 thick slices, depending on the size of your pan.
