Healthy Tasty Eggplant Recipe

Ingredients: - 1 whole eggplant cut in half
- 1 cup enriched brown rice, uncooked
- 1 cup feta cheese, crumbled
- 1-8 oz. tomato sauce
- 1 clove garlic, finely minced
- 1 medium sized tomato, diced
- ¼ cup scallions, diced
- ¼ cup black olives, diced
- 1 tsp. fresh basil, finely minced
- 1 tbsp. olive oil
- 1 tsp. salt
- 1 tsp. black pepper
To Make:
Preheat the oven to 350. Take a 9-inch baking pan and spray it with cooking spray.
Boil the eggplant in water to make removing its skin an easier process. Once you have peeled the eggplant, cut it in half and remove all of its seeds. Place each eggplant in the baking pan and set the pan aside.
In a small saucepan, boil the brown rice in tomato sauce for 10 minutes and then simmer the rice on low heat, covered, for an additional 10-12 minutes. While the rice is cooking, you will have time to mince and dice the vegetables and seasonings.
In a small pan, sauté the garlic, scallions, and basil in olive oil. Add the sautéed ingredients to the rice and tomato sauce and stir. Then add the remaining vegetables.
Feta cheese can be bought pre-crumbled and that will actually save you time with this recipe. You can use another type of cheese if you prefer, however feta compliments this dish very well. Spoon the rice mixture into the halves of the eggplants. Top off the rice with the feta cheese.
