Healthy Holiday Dessert Recipe

This healthy holiday recipe is for an angel food cake style fruitcake.
This recipe is easy to prepare and requires no oven time. This angel food cake makes a lovely edible centerpiece to any holiday table. Your holiday party will not be complete without one of these on the menu. Ingredients: - 1 loaf angel food cake
- 1 kiwi fruit, diced
- 1 cup pineapple, diced
- 1 cup apricot preserves
- ½ cup maraschino cherries
- ½ cup coconut, shredded
- ½ cup pecans, diced
- 1 cup raisins
To Make: A store bought angel food cake will work best in this recipe. Apply the apricot preserves to the top and all sides of the cake. More than a cup of preserves may be required. Use as much as you would like. Now comes the time for adding the fruit to the angel food cake. The maraschino cherries work best on the top of the cake. If put on the sides, they will roll off. Apply the raisins and pecans to the top and sides first. Leave places on the cake open for the pieces of fruit to fill them in. Canned pineapple may be used in this recipe. Add the pineapple and kiwi to the cake. Lastly sprinkle coconut flakes on the top and sides of the angel food cake. This is a quick and easy recipe for a holiday cake. You can add more fruit or different types of fruit to the cake if you wish. A dollop of fat free cool whip may be added to the tops of each piece of cake when it is served or it can be eaten plain.
