Healthy Mexican Party Dip Recipe
This healthy Mexican recipe is a great party dip. The spinach dip has a distinctive flavor and an unforgettable taste.
It is a vegetable friendly recipe and it will compliment any party where your guests will be very impressed.

Ingredients:
- 2 cups fresh spinach, finely chopped
- 1 small Roma tomato, diced
- ¼ cup red onion, diced
- 1 avocado, diced
- ¼ cup black olives, chopped
- 1-8 oz. package cream cheese, softened
- 1 tbsp. pimento, minced
- ½ cup skim milk (more may be needed)
- 1 tsp. salt
- ½ cup Monterey jack cheese, shredded (optional)
To Make: Frozen spinach may be used in this recipe. Preheat oven to 350. Chop up spinach into bite sized pieces.
Put spinach in a small sized mixing bowl with cream cheese that is softened. Add skim milk to the bowl. Mix together all of these ingredients. More milk may be required to keep the mixture moist.
Next, dice up the tomato, the red onion, and the avocado. Add these ingredients to the small mixing bowl.
Chop up the black olives into small pieces and add them and the minced pimentos to the bowl. Add one teaspoon of salt to this mixture.
Keep stirring the mixture until it is blended well. Grease a shallow baking pan with vegetable oil or cooking spray. Put the spicy spinach dip into a shallow baking pan. Spread it evenly throughout the entire pan. Cook the dip on 350 for 12-15 minutes.
Remove the pan from the oven and place the dip in a shallow serving dish. Shredded Monterey jack cheese can be put on top of the dip before serving. This part of the recipe is optional and not required.
