Healthy Soul Food Recipe



Food that comforts your soul is a must have.

This healthy soul food recipe is nothing more than red beans and rice. It is an easy to make dish and has a bold, hearty flavor.

Put a heaping helping on a plate with some macaroni and cheese and you have got yourself a delicious meal.

 

 

Ingredients:

  • 4 cups red kidney beans
  • 2 cups enriched whole grain rice
  • 1 large smoked ham hock
  • 1 large white onion, diced
  • 4 garlic cloves, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 cup celery, diced
  • ½ cup fresh jalapeno, diced
  • 1 tbsp. red pepper flakes
  • 1 tbsp. chili powder
  • 1 tbsp. salt
  • 1 tbsp. black pepper
  • 2-16 oz. can tomato sauce
  • 1 cup water

To Make:

Soak the red kidney beans overnight in cold water. Cook the whole grain rice first. Boil the rice on high heat for 10 minutes. Reduce the heat to low, stir once, and cover. Continue cooking the rice for 15 more minutes. While it is cooking, dice up your ingredients.

In a crock-pot, combine the red kidney beans and the ham hock. Turn the crock-pot on high. Add the onion, garlic, and bell peppers. Stir the mixture. Now add the celery and jalapeno.

Add the water and open the cans of tomato sauce. Pour the tomato sauce into the crock-pot. When the rice is done, drain the water from it and add the rice to the beans. Lastly, you will need to season you red beans and rice. This recipe is only a guide. Use the spices you love.

Experiment a little. Add the red pepper flakes, chili powder, salt, and black pepper. Tabasco sauce has been used in this recipe before. If you are a lover of spicy cuisine, then go ahead and add it. Let the red beans and rice cook on high heat for 1 hour. It may take a little longer depending on how soft you want the beans. Serve immediately when finished. Refrigerate any unused portions.
