Low Fat Shepard's Pie - Friendly to your Heart and overall Health


 

This unique take on traditional shepherd’s pie is an absolute must bake dish.

This heart healthy diet recipe is vegetarian and can even have the butter eliminated for the mashed potatoes creating an even better dish for the heart.

Ingredients:

  • 1 bag Morningstar Farms burger style recipe crumbles
  • 4 medium sized potatoes
  • ½ cup original flavored soy milk
  • 1 cup water
  • 1 ripe medium sized tomato, diced
  • 1 green bell pepper, diced
  • 1 small red onion, diced
  • 2 large carrots, chopped
  • 1 small frozen bag mixed vegetables
  • 1 cup vegetable stock
  • ¼ cup low fat margarine, melted
  • 2 tbsp. Worcestershire sauce
  • 1 tbsp. olive oil
  • 1 tsp. fresh parsley, minced
  • 2 tsp. salt
  • 2 tsp. black pepper

To Make:

Preheat the oven to 400.

Grease any size casserole dish. Peel the four medium sized potatoes and dice them into small chunks.

Set the potatoes aside. In a small pan combine the burger style crumbles, the parsley, and the olive oil.

Cook the crumbles on medium heat for 10 minutes. Remove the pan from the heat and place the crumbles on a paper towel to soak up any unused olive oil.

In a medium sized saucepan, combine the chunky potatoes and 1 cup of water. Bring the potatoes to a boil. Remove them from the heat and add soymilk and butter to the potatoes.

Some of the water may need to be removed before mashing the potatoes. Use your own discretion. Using a potato masher, mash the potatoes until they are smooth and creamy. Set aside.

In a separate saucepan, combine the frozen vegetables, the vegetable stock, Worcestershire sauce, parsley, salt, black pepper, and the remaining fresh vegetables.

Boil these ingredients on high heat for 12 minutes. Add the crumbles to the pan and let the pan set on the heat for just a few more minutes.

Move the mixture to the casserole dish and pour in. Add mashed potatoes to the top of the crumbles mixture using a fork. Bake this dish for 20-25 minutes or until top begins to brown.

Serve immediately.
