Some say that using acidy ingredients will only make the outside of the roast soggy and will not penetrate the meat inside. While others say that you should always use an acidy ingredient because it will penetrate the outer layer of the roast and not only give your meat a delectable taste but will also tenderize. No matter which way you go, you should use some type of marinate or rub for marinating prime rib. You should also after rubbing the prime rib place it in the refrigerator for at least 2 hours or overnight if possible to ensure that the flavor can soak into the meat. One way to ensure the marinade does soak into the meat is to use a sewing needle and make very small holes in which the juice can soak into. You can also use whole garlic cloves and press into the roast under the fat.
As suggestions for a rub for marinating you can mix together garlic powder, coarse salt, pepper and rosemary. Rub the mixture on the roast pressing as you go firmly. Then refrigerate as suggested above before cooking.

- 4 tablespoons of lime juice,
- 4 tablespoons of wine vinegar,
- 6 canned chipotle chiles,
- 6 garlic cloves,
- 4 teaspoons of oregano,
- 1 teaspoon of pepper,
- 1 teaspoon of salt, and
- 1 teaspoon of ground cumin.
Chop all ingredients very fine and then mix together. Rub over the entire prime rib roast and refrigerate. This will give you a tasty and spicy prime rib that you are sure to love.
This marinade for marinating prime rib uses: - ½ cup of red wine,
- 4 tablespoons of balsamic vinegar,
- 2 tablespoons of Worcestershire sauce,
- 4 minced cloves of garlic,
- 2 teaspoons of salt,
- ½ teaspoon of pepper.
Refrigerate and turn over in the marinade around every 30 minutes.
