- 3 cups of clam juice,
- ½ teaspoon of saffron,
- 2 tablespoons of vegetable oil,
- 2 tablespoons of minced garlic,
- 1/3 cup of chopped onions,
- ¼ cup of chopped red pepper,
- ¼ cup of chopped green pepper,
- 1 cup of uncooked Spanish rice,
- 2 chopped tomatoes,
- 2 teaspoons of paprika, salt to taste, and
- 1 cup of frozen early or baby peas.
Preheat your oven to 350 degrees Fahrenheit. Over medium heat, heat the clam juice and the saffron to just before boiling. Just keep the mixture hot but not boiling. In a large pan heat the vegetable oil. Add the garlic, onion, pepper and cook for about 2 minutes until just a little soft. Remove the vegetables and add the rice, tomatoes, paprika and salt, add the saffron mixture. Simmer on medium heat until most of the liquid is absorbed by the rice. Add the shrimp and peas, stir gently. Now pour everything into a baking dish. Bake for about 20 minutes until the rice has absorbed almost all of the liquid. Do not overcook the rice. The rice will still cook after removing from the heat, so take that into consideration.
