Chestnut Stuffing

Around the Christmas season everyone loves the aroma of roasted chestnuts and some even enjoy roasting their own chestnuts. What ever makes chestnuts a very popular and tasty treat around the holidays you will love the taste of a chestnut stuffing to serve along side your turkey or ham.

For this chestnut stuffing recipe you will need:

  • 2 cups of roasted chestnuts,
  • 1 tablespoon of vegetable oil.
  • ¾ pound of sausage,
  • 3 cups of chopped green onions,
  • 3 cups of chopped fennel,
  • 3 cloves of minced garlic,
  • 2 tablespoons of thyme,
  • 2 tablespoons of rubbed sage,
  • 6 cups of dried bread cubes,
  • 1 cup of dried figs,
  • 1 ½ cup of chicken broth and
  • ¾ cup of Madeira.

In a large skillet over medium heat cook the sausage with just a bit of the oil for around 6 minutes. Be sure to crumble the sausage as it cooks. In a large bowl, add the chestnuts and sausage. In the same skillet add the green onions, fennel and sauté until the onions and fennel are soft. Stir in the rest of the seasonings and cook until well blended. Mix together with the chestnuts and sausage. Add the bread, figs, broth and Madeira. Place in a greased baking dish and cook for one hour on 350 degrees Fahrenheit. You can also stuff your turkey with this wonderful chestnut stuffing and let it bake as your turkey roasts.

Another variation that is a little easier to prepare but tastes just as great is this one. You will need 2 pounds of roasted mashed chestnuts, 1 tablespoon of olive oil, 6 cups of soft bread crumbs instead of dried, ½ cup of margarine, ½ cup of chopped onions, 1 tablespoon of chopped parsley, salt and pepper to taste. Preheat your oven to 400 degrees. In a large bowl, mix together all pour into a baking dish. Bake for around 40 minutes or until done. You can also stuff your turkey with this stuffing.
