Deep Fried Turkey comes from Cajun or Creole cooking and is a great way to enjoy a turkey that will add a zesty flavor to your holiday meal.

To prepare a deep fried turkey you will need 4 to 5 gallons of vegetable oil, 1 whole turkey, and cayenne pepper. You will also need a 10 gallon pot and a propane cooker. Before you begin set your propane flame to 390 degrees Fahrenheit, Pour the oil into the pan and begin to heat.

Now, you need to prepare you turkey. Rinse the turkey inside and out with warm water, pat dry, and then let it drain over the sink on a rack. When the oil has reached 390 degrees Fahrenheit, pat your turkey again and sprinkle with the cayenne pepper and place in the basket and lower it into the oil.

If you do not have a basket, insert the long cooking fork into the cavity of the turkey and lower into the oil. Do not let the temperature of the oil become any lower than 350 degrees Fahrenheit. Check the turkey every few minutes and move it around.

The approximate cooking time is 3 to 4 minutes per pound. When the turkey floats to the top of the oil and is crispy and golden brown it is ready to serve.  The temperature using a meat thermometer should be 180 degrees Fahrenheit when completely done. Allow the oil to drain from the turkey before serving. Let cool before carving and serving.
