Roast Turkey with Dressing
There are several different types of dressings to serve with your turkey but there is one that is traditional that is served at most holidays where turkey is the main course. There may be a little variation, but the basic ingredients are still the same. You will need to prepare your turkey as usual, rinse well inside and out and rub with lemon juice and butter before you prepare the dressing. Here are two varieties of the traditional dressings that are served with Holiday turkey and dressing recipes. For the first one you will need 5 pints of dry bread crumbs, 1 ˝ pints of whole milk, 4 eggs, 1 tablespoon of sage, salt and pepper to taste, and the giblets from the turkey. In a large bowl, mix together all of the ingredients except for the giblets. Cut the giblets into tiny pieces and then add them to the dressing. Place your turkey in a roasting pan and then fill the cavity with the dressing. Do not pack it tight, place it loosely inside the turkey and place the remaining around the turkey. Cover the roasting pan with aluminum foil like a tent and bake according to the directions for the pounds of your turkey usually 15 minutes for pound. Uncover during the last 20 minutes to brown. Another recipe for the dressing is this one. You will prepare the turkey the same as above and then prepare this dressing and add it into the cavity of the turkey and cook as usual. For this recipe you will need ˝ cup of chopped onions, ˝ cup of chopped celery, 1/3 cup of butter, 4 cups of dried bread crumbs, 2 beaten eggs, ˝ teaspoon on sage, ˝ teaspoon of poultry seasoning, turkey broth just enough for moistening, salt and pepper to taste. First, sauté the onion and celery in the butter until soft. In a large bowl, add all ingredients except the turkey broth, mix well. Now add the broth until mixture is moistened. Spoon the dressing inside the turkey and bake like above.
