Smoked Turkey Recipes
Many people during the holidays enjoy serving smoked turkey recipes because they are easier to prepare and also very delectable. While the turkey is in the smoker you will have plenty of time to prepare other delicious dishes to enhance your meal. To prepare this Smoked Turkey recipe you will need 1-15 pound turkey, 1 lemon, salt and pepper to taste, 1 whole peeled onion, butter, and mesquite wood chips. Before you smoke your turkey you will need to remove the giblets and the neck from the inside of the turkey. You can save these for other delicious recipes if you like. Rinse the turkey inside and out with cold water. Now, rub the cut lemon on the interior and exterior of your turkey. Place the whole onion inside the cavity of the turkey, this will give your turkey a wonderful flavor and will rid the turkey of any bitter taste. Close cavity with skewers. Tie the legs to tail with cooking string and lift wingtips up and over back so they are tucked under bird. Rub butter over the outside of your turkey. Before Smoking soak the wood chips in water for about 30 minutes. Prepare your grill and then place the wood chips onto of the charcoal. Spray the rack with a cooking spray like Pam. Place your turkey on the rack and cover with lid. Your turkey will take 8 to 12 hours to be completely done and ready to serve. Using a meat thermometer you can check for doneness by inserting into the thigh of the turkey. The temperature should be in a range between 180 and 185 degrees Fahrenheit when your turkey is ready. You can baste your turkey with more butter while smoking and watch the pan to be sure there is still enough water and watch that you do not need more wood chips or charcoal.
