Sweet Potato Pie - Only on Thanksgiving?

Thanksgiving is a holiday filled with sweet treats and tasty delights. The holiday would not be completewithout a table filled of the popular traditions like fudge and the ever popular and deliciously colored orange sweet potato pie.

This recipe has the crunch of a pecan topping plus the sweetness and gooeyness of a marshmallow topping too. It is sweet, savory and makes the holiday table come to life with beauty and great taste of this dish. Bring on the treats and let's eat.

Ingredients:

  • 4 cups sweet potatoes, peeled, cooked and mashed
  • 1-cup brown sugar
  • 2 eggs
  • ½-cup milk
  • ½ cup butter, melted
  • 2-teaspoon vanilla
  • 2-teaspoon honey
  • 2-teaspoon pure maple syrup

Topping:

  • 1 cup pecans, minced
  • 1-cup mini marshmallows
  • ½ cup butter, melted
  • 1-teaspoon cinnamon
  • Pinch of white sugar

Crust:

  • 20 graham crackers,
  • crumbled½ cup butter, melted

Preheat the oven to 350 degrees. Sweet potato pie can be made from canned or fresh sweet potatoes.

2 large cans or 4 large fresh sweet potatoes will work.

If you use fresh potatoes, you will have to skin, boil them until soft, and mash them in a large bowl. The canned potatoes will need to be semi cooked before using and mashed. Combine the potatoes with the brown sugar, eggs, butter, milk, vanilla, honey, and maple syrup. Mix well and set aside.

Next, cook the whole pecans in a toaster oven for a couple of minutes until they are well toasted. Let them cool and then mince them in a rotary grater. Lightly toss the pecans with cinnamon and a dust of white sugar. The crust can easily be made by using a food processor and melted butter. You may need more crackers if you want a thicker crust.

In a 13x9 casserole dish, lay the graham cracker crust with a fork making sure to cover the whole dish. Next, add the sweet potato pie mixture spreading it evenly around the dish too. The last step is to add the pecan mixture over the top. Bake the pie at 350 degrees for approximately one hour.

The marshmallows can be added to the last 10 minutes of the cooking time. You want them to melt and form a nice crust, but not burn. Marshmallow crème or large marshmallows can also be used. Let cool before serving.
