5 Great Snacks on Christmas Day

Everyone loves to snack on Christmas Day awaiting Christmas Dinner or even afterwards while sitting around a warm fire. But, when do you have the time to thing of exotic snacks and quick snacks for your family, guests and friends to enjoy. Well, these are a few great snacks that you are sure to enjoy on Christmas Day.

1.) Garden Vegetable Dip

1- 8 oz. pkg. cream cheese
2 tbsp. minced chives
2 tbsp. pimento, cut into halves
1 tsp. coarsely diced red pepper
1 tsp. coarsely diced yellow pepper
tsp. minced cilantro
2/3 cup Heinz chili sauce
tsp. salt
1/8 tsp. pepper

Make sure cream cheese is softened before blending. Add chili sauce first. Blend until creamy. Add chives and pimentos. Add salt and pepper to taste. Chill in refrigerator for one hour. Let stand before serving. Add cilantro right before serving. Garnish dip with grape tomatoes that have been cut in half. This dip goes well with freshly chopped vegetables. It can also be used with potato chips and pretzels, or tortilla chips.

2.) Eggnog

2 egg yolks
4 cups milk
cup heavy cream
1/3 cup sugar
3 tbsp. sugar
1 tsp. vanilla
tsp. salt
Dash of ground nutmeg or cinnamon
Rum or brandy flavoring to taste

Beat egg yolks with 1/3 cup sugar. Add salt. Stir in milk. Over medium heat, cook until mixture coats spoon. Stir constantly. Set aside to cool. Beat egg whites until foamy. Add three tbsp sugar and heavy cream. Add to other egg mixture. Add flavoring of your choice first. Then add 1 tsp. Vanilla. Chill approximately four hours. Serve with large amounts of whipped cream in a big coffee cup. Dash the top of your eggnog with a bit of nutmeg or cinnamon. Serves up to 8.

3.) Mistletoe

2- 1 liter bottles of lemon-lime soda
Half-gallon of fat-free vanilla ice cream
1 tbsp. sugar
1 egg, white part only
2 tbsp. lime juice
Maraschino cherries
Sprigs of mint
Lime wedges

Mix entire containers of both bottles of lemon-lime soda and lime juice. Place in one quart tray. Freeze soda until mushy consistency is formed. Beat egg white slightly. Add egg mixture to lime mixture. Freeze again with one last stir making sure mixture is firm. Remove tray from freezer after one hour. Breakup consistency with a fork just before serving. Place dessert in shallow glass. Top each with two maraschino cherries, a sprig of mint and a lime wedge. Serves 10 guests.

4.) Cheeseball

1 pkg. cream cheese, spicy flavored (if you can find it)
2 tsp. pimento dip
2 tsp. green olives
2 tsp. black olives
1 pkg. bleu cheese
1 sm. jar cheddar
1 pkg. Swiss cheese
2 tbsp. finely chopped onions
1 tsp. garlic salt
1 tbsp. chopped sweet pickle
Chopped pepperoni
Chopped walnuts
Ground red pepper

Let cheese stand at room temperature before starting. It will mix together better if you wait. Mix cream cheese, bleu cheese, Cheddar and Swiss together. Blend well. Mixture must be creamy. Add pimento dip, green olives, and onions. Form into balls. Roll in chopped pepperoni then in chopped walnuts. Top with ground red pepper.

5.)Party Mix

1 cup cheerios
1 cup wheat Chex
1 cup rice Chex
1 cup pretzels
1 cup peanuts
1 cup sunflower seeds, without shell
1 cup almonds
1 cup cashews
1 cup pistachios
cup butter
cup Worcestershire sauce
1 tsp. garlic salt
1 tsp. onion salt
1 tsp. celery salt

Preheat oven to 225. Combine cheerios, wheat and rice Chex and pretzels. Then add peanuts, almonds, cashews, and sunflower seeds to bowl. In saucepan melt butter. Add pistachios. Gradually add Worcestershire sauce and garlic, onion, and celery salts. When salts have evaporated take off burner. Pour mixture over dry ingredients and mix well. Bake for one hour, covered. Remove cover. Bake for another hour, occasionally stirring. Toss once in a dash of salt and let cool before serving.
