Veal Stew Recipes

For this recipe you will need 1 ½ pounds of veal stew meat, 2 crushed cloves of garlic, 1 tablespoon of olive oil, 3 ½ cups of water, 1 can of beef broth, 1 tablespoon of marjoram, ½ pound of potatoes, 1 ½ cup of frozen corn, 1 zucchini, and salt and pepper to taste. Gently toss the veal with the crushed garlic and set aside. In a large saucepan heat the olive oil over medium heat. Brown the veal in the oil on both sides. Season your veal with the salt and pepper and then return to pan. Now, add the water, broth, and marjoram. Bring the veal to a boil and then reduce heat and cover the pan and continue cooking for 45 minutes. Next, add the potatoes and corn. Cook for around another 15 minutes or until the vegetables and veal are both tender. Then add the zucchini and cook covered for around 5 minutes. You do not want the zucchini soggy, just slightly tender.
