Cut the onions in slices and lay them on the Casseroles bottom. Lay they wrapped chicken on top of the onions

Peal the Tomatoes and cut them in four pieces, remove the seeds.

Put the tomato on the chicken, and sprinkle some  black pepper salt and basil over the dish. Lay a few flakes of butter at random over the chicken, and put in about 2 tablespoons of oil so you have a nice gravy afterwards.

Put the Casserole in the over and cook for about 40 minutes, then shimmer to about 175 for 10 minutes. Check to see if the meat is done and serve with some fresh chopped parsley over the chicken.

Irish CoffeeIrish Coffee

This is a drink Grandpa had no objection to whatsoever. I remember Grandma an Grandpa quarreling about the amount of whisky.

The right amount is one consumption, I know that I gave my Grandpa slightly more than that.

1.75 oz Irish Whisky
1 – 2 table spoons brown sugar
very strong hot black coffee
whipped cream

Rinse the glasses in warm water, and pour the Whisky in.  Fill the Glasses with the hot coffee to about 2 cm under the rand. Add the Sugar, and mix the Coffee, Whisky and Sugar. Put the Wiped Cream on top, don’t stir. Serve and enjoy.

Be aware that this drink can be rather “overwhelming
