Macaroni with Tuna, Corn Salad, Apple Curd with Raisins
Marconi with tuna
- 15 Oz Macaroni
- 2 cans tuna in oil
- 1 red and 1 green pepper
- 1 pound fresh tomatoes
- 2 Cloves Garlic
- Dried or fresh basil
- 2 Tblsp. of capers
Let the oil from the Tuna leak out into a small bowl. We will need it later on. Remove the seed lists from the peppers and cut them into thin slices. Bake the paprika in the tuna oil till it becomes gentle. In the meantime peal the tomatoes and cut them in pieces. Add the Tomato pieces to the already baking Peppers and let it simmer all for about 10 minutes.
For the sauce take the dry tuna, add squeezed garlic cloves, basil and gently warm that mixture, If you want add a little olive oil. Cook the macaroni, but make sure it not over done. Mix some sliced capers trough the sauce and serve If you want add some parmesan cheese on top of the dish
Apple curd with raisins
- 13 Oz curd,
- 2 apples (slightly acid, see what is available)
- 2 tablespoons raisins,
- 3 tablespoons (sheer) sugar
Peel the apples put them through the blender. Mix them with the curd and sugar. If you have the time weld the raisins, otherwise mix them with the apple, curd mixture.
