Veal – The most Tender Beef around

Veal is the tenderest beef you can ever serve to your family or dinner guest and there are many ways that you can prepare it to perfection. Many people around the world serve veal cutlet in famous restaurants that you can now create at home. You only need to find the recipes and learn how to cook this meat.

For roasting this beef delicacy you may need to add an additional layer of fat around the meat such as bacon to prevent the meat from drying. You should roast this beef for all recipes at 325 degrees Fahrenheit for around 25 minutes per pound. Roasting should be used to prepare recipes with the Loin or Round roasts. You should not add water or cover the meat and you can either season the beef before or after roasting.

For broiling and grilling it is best to use veal cutlets, chops or kabobs. You should broil or grill for 12 to 14 minutes for chops or cutlets that are 1 inch in thickness. The meat should be place about 2 to 3 inches above the heat. Half way through the cooking turn the meat.

Frying or Sautéing recipes are best for veal scallopini or veal cutlets. If you plan on deep frying the cutlets or patties you should use oil that is 375 degrees Fahrenheit and cook for 2 to 4 minutes. If sautéing for scallopini it is recommended that you use butter or margarine and cook over medium heat for 1 to 2 minutes.

Braising is a wonderful way to prepare round, breast, and shoulder cuts of this wonderful beef. You should prepare these recipes with a seasoned liquid and allow the meat to cook for 1 ½ to 2 ½ hours and for ribs you should cook around 2 hours.

For the recipes that call for arm, blade chops, cubes or stews it is best to cook around 45 minutes to one hour. You can also roll the beef in seasoned flour for a unique flavor, add just a bit of liquid of your liking, cover and lightly boil simmer until the meat is tender. For the sauce you can add the vegetables the last 15 minutes of cooking.

Poaching or stewing this type of beef is very similar to braising but you should completely cover the beef with liquid for all recipes and it is best to use the shoulder or breast. You should cover and cook on top of the stove on medium heat for 2 to 3 hours. You can also add the vegetables again 15 minutes prior to the recipe being done.

There are many wonderful sauces or marinades that you can use that will help to tenderize the meat even more such as lemon juice, vinegar, wine, and pineapple juice. It is recommended when marinating to place the beef in the liquid and place in the refrigerator for 6 to 24 hours in a cover dish.

You will find that you can serve many different side dishes that will please the entire family once they taste your veal cutlets or any part of this beef once you find your favorite recipes.
